Japanese Cotton Cheesecake

After losing my original recipe I found one I believe to be pretty close. This baked cheesecake with a texture akin to a cross between a light fluffy sponge and a New York Cheesecake had the appearance of latex foam. It is without a doubt THE most delicious cheesecake We have ever made. After a few oven thermostat issues(something I've been wingeing about for a while now) it eventually cooked. Cracked top and all. Flavour perfect, appearance less than. You will want to close your eyes to savour this dessert, the pure pleasure of it in your mouth needs no interference.
