Chocolate Croissant cheekyricho 3 ingredients

I like chocolate croissants and it's a bit if a production to make the croissant pastry do I decided to make my little chocolate croissants using only 3 ingredients with stuff I already had in my pantry here is the result. Super popular at my impromptu morning tea for a couple of drop in visitors. You can make it too in a few minutes. Get the kids involved you even make mini ones like we did for those who have smaller appetites. Caprese Italian Tomato Salad cheekyricho video recipe

We made our homemade Mozzarella cheese and fashioned some of it into little baby Bocconcini, rested them in their whey until chilled and sent Richo out to the herb garden to collect some fresh Basil A few salty capers spangled over sweet vine ripened fresh tomatoes freshly cracked pepper, sea salt flakes and the best extra virgin olive oil makes this colourful tasty salad platter a sight to behold. Perfect for the Christmas table or alfreson dining. We serve it with a littleBalsamic  Vinegar with a glass of anything icy cold for that low carb anti pasta  party food.

Coconut Icecream 2 ingredient vegan cheekyricho video recipe

100% coconut, that's no dairy, no eggs, no cane sugar, no gelatine, no grain. Something this healthy has absolutely no right to be so amazingly creamy and delicious. It's incredibly simple to make and cheap too. You have to try it no one is ever going to believe it's not full of cream it's that good!

Steamed Ginger Shallot Fish and Rice

I have a rice cooker and I have cooked a Kasutera Cake in it, coconut rice and a creamed rice in it but I got to thinking what else can this little baby do? Well I am here to tell you it can turn a few fresh caught bream fish fillets with a few condiments and rice into a one pot meal in about 20-25minutes. Cooked to perfection packed with flavour, so simple, so easy and so so satisfying. Fluffy rice topped with moist sticky delicately seasoned boneless fish and the cooking liquor drizzled over the top. Mid week meal sorted!!

Okonomiyaki Savoury Japanese Pancake

If you can't get the kids to eat veges this Okonomiyaki might be your answer. The most economical, tasty Vege smuggling dish I have encountered this side of our Cauliflower Pizza Crust. It's so easy to make, tastes fantastic, is healthy and looks good too. No wonder it's such a popular Japanese Street Food. We hope you give it a try because the cabbage is so finely shredded and raw when added to the batter then cooked in just a few minutes, slathered with Home made Okonomiyaki Sauce (we even show you how to make that) and a swirl Of Japanese Mayonnaise and a sprinkle of crispy toasted seaweed for garnish and textural interest completes the dish. Peanut Butter $ Jelly Ice cream Sandwiches cheekyricho video recipe

Strawberries are cheap, luscious and plentiful at the moment and we have a whole playlist on our cheekyricho YouTube channel Dedicated to this delightful little berry. I wanted to make something original and summery to showcase Madame Strawberry but I am having a Gourmet Ice cream moment, no make that fortnight and with the warmer weather upon us and my penchant for sitting out in my garden road testing my latest icy creation, this little idea popped into my head and I simply had to make it. It's fantastic, the crunchy salty peanut flavour blended into a creamy rich Icecream layered top and bottom with home made fresh strawberry jam, then sandwiched between two Icecream wafers. Hang on don't drool yet, I'm not finished. Believe it or not you can wrap these individually in Baking Paper and pop them bake into the freezer. Unwrap them at will and you have a ready made moisture proof plate to catch any wayward drips. Don't ask me how the wafers stay crunchy but they do, I think the gooey jam protects them. I don't know about the science involved but I do know this is so easy to make and eat you would be crazy not to give it a try. Depending on you wafer sizes this recipe makes 10 cheekyricho Peanut Butter and Jello Icecream Sandwiches.

Pickled Eggs cheekyricho YouTube video recipe

Cheekyricho Pickled Eggs. I am often asked what to do with an excess of fresh eggs. Baking is the obvious answer, meringues, pavlova, egg custards, quiches and of course lemon butter or lemon curd. On a recent trip to far North Queensland we stopped off at a Farmers Market, I love visiting country markets, buying fresh produce for our camp meals, sampling locally produced unusual preserves and baked goods. Many old fashioned home cooks donate their 'specialty' to local charitable organisations for cakes stalls etc, quite often using ingredients not available where we live. At one of these markets I bought some home pickled eggs. They were great, with fridge space at a premium (because prefers cold beer) anything that can be stored unrefrigerated is a bonus. These eggs don't require chilling, keep for up to two years and are perfect for salads and consuming with aforementioned cold beer as the sun goes down whilst gazing out over some picture perfect vista. Him day dreaming about travels made or to be made and me busily writing out recipes and jotting ideas for my YouTube channel Into already bulging notebooks. 
First job when I got home was to bring you Pickled Eggs. So simple, makes use of an abundance of eggs and are a great high protein snack when out in the kayak. Salted Caramel Popcorn Ice Cream

In the supermarket  few weeks back and a product sample lady offered me a caramel popcorn Icecream sample. Now everyone knows I'm popcorns biggest fan so I didn't need too much convincing. It was nice so by the time I had arrived home from the shops I had formulated a copy of that gourmet Icecream in my head. Now to put the idea into practice. This is what the cheekyricho kitchen came up with. Richo reckons it's much nicer than the expensive store bought stuff. Awesome 3 ingredient Aussie Damper

My neighbour shared his Aussie Damper Recipe with me and I had to share it with you. Not passing this fantastic recipe on is bordering on criminal negligence. It's idiot proof, smells and looks just like home baked bread and cooks in 15 minutes in the camp oven over a camp fire. Take the lid off the camp oven and you are greeted with the smell if home baked bread, except it has no yeast, fat or eggs in it. It's light fluffy and fragrant, you can bust it open and eat a chunk, slice and butter it or even toast it and eat it hot and crusty slathered in butter and golden syrup.

Apple Cinnamon Almond Damper

Cooked to perfection in a Bedourie Camp Oven over hot coals in an Open Fire. There is a sweet almond, spicy moist filling looped all through this fluffy soft damper, with fresh crisp tart Granny Smith apples slivers wedged into the folds, then brushed with milk sprinkled with raw sugar into a pan onto a trivet and popped into the camp oven. Coals are ready, camp oven onto a couple of well Placed stones in the fireplace and a few shovels of coals ontop of the lid, resist the urge to peek because this baby is going to need 25-30 minutes. It slices beautifully, the apples are just tender, the sugar has turn to a bubbly toffee like coating and the fresh baked aroma is .... An experience to remember. Cut a couple of hot wedges to impress Arthur, My neighbour who says "that's not a Damper it's a tea cake." But then he gave it an 11/10, that is better than good enough for me.  Arthur is not prone to  being too frivolous with compliments. He also claims to be a Damper Expert and has offered to teach me his special recipe. Arthur and his family have been camping forever and when he says he can make the best Damper you had better believe him.  That   Recipe is coming soon.
