Bubblegum icecream cheekyricho style

We love the flavouring of bubblegum & it's very hard to find it as a flavour essence. Aeroplane Jelly have released a Bubblegum jelly & we decided to try our hand at Bubblegum Icecream with it. Just like Wendy's this is easy & creamy, using only 3 ingredients. Set to be our latest fave flave!

So I popped the other lounge on gumtree and sold it in a week. New one is in and looks and feels lovely. Very comfy and more suited to the decor. Should see me out I think it'll be very durable with its classic styling.

Hot spinach cob dip

Very popular a generation ago and still useful today. Take some fresh garden greens, introduce them to a creamy sauce and some smoky bacon then heat them in a hollowed out crusty cob loaf and you have a ready made dish that is perfect for informal entertaining and you can even eat the bowl. Car ferry river crossing.


Crossing the river by car ferry. It's storm season here and this trip can get a bit "hairy" when the weathers up. No problems today though we are crossing the Clarence River which is home to the largest inland Island in the Southern Hemisphere. We are doing a Relly Run  visiting some relatives before Christmas.

My new hotplates.

My hotplates work perfectly but constant cleaning and use haven't been kind to the indicators around the dials. So much so they were totally illegible. I have scouring the net for a built in induction wok burner. For those of you who follow our YouTube channel you will know how much I use my portable one. An opportunity too good to pass presented itself in the way of exactly what I was after. A new cooktop with 3 burners plus a wok burner. Within a day of its delivery we had cut out the bench and had it wired in. I am so excited. I have freed up heaps of bench space. Replaced my existing cooktop with a more energy efficient one and still got an induction wok burner. Santa came early to the cheeky kitchen. You can expect some stove top marvels now. I'm pretty happy about my new doodad.

Panforte Italian Christmas Cake

This Tuscan Cake is a cross between a cake, biscuit & chocolate toffee. It is a rich honey flavoured treat to be enjoyed with strong coffee. It keeps very well, makes excellent home gifts and is so much cheaper and tastier to make at home than the store bought variety. A little diddly to make as there are a couple of steps in the process but unlike anything you have ever tasted. The name literally means strong cake. Check it out on our YouTube channel .

Christmas Pudding in 40 minutes cheekyricho YouTube recipe.

If you have even heated your kitchen up along with your Christmas Pudding, this recipe is for you. Really easy. Make it ahead of time and pop it into the Microwave for 40 minutes on Christmas Day. No pudding Cloth, No hanging in the garage for weeks, no boiling it AGAIN on Christmas Day. This is THE answer. We used the Thermochef to simplify things but you could mix this with no gi-normous pudding boiler. Its very energy efficient, moist, absolutely delicious and I am wondering where I can hide it, from myself, so some survives until Christmas Day. I may just have to make another one, doesn't matter its that quick to do, it could be whipped up before morning tea. The new lounge

So I take Mum to a furniture shop. She has this new contemporary house which is all white an minamalist and her furniture is busy and floral! Time for an update. Something comfy, hard wearing and long lasting that will suit the new house. Soft white leather, not too close to the ground, she's having a knee replacement in January. Nice and beachy with good quality stuffing and frame. How good is this??  Ok talked me into it! I'll have one too.  We'll take 2 lounge suites please. That's how to make a salesmans day!

Got a new 30 second tent. Took Richo 40 seconds to erect it. His excuse "it's my first time!"  My answer "Not fast enough! Do it again" Good Heavens! Anyone would think he was getting paid by the hour!! 😄😄😄😄😉

Unsuccessful shopping trip

Mum is visiting and forgot her birdseed for the Buddy Bird. So off to town we all went. 30kms from home ( with no public transport) little car (mums pride & joy) goes cough !! Splutt!! Warning light STOP!!  Coasted to the roadside (in a bus zone) and Failed to Proceed ( that's Rolls Royce talk for died) NRMA came. Uh oh cant fix but can tow... Where to ?? No answer on the phone for 3 mechanics.  Just take it to your workshop. What do mean they can't look at it til next week? How do we get home?  All available members of the potential rescue team are with the stranded vehicle. Ah! ring the neighbour and hope she didn't start Happy Hour early. Huge Thank you to Denise for coming to fetch us. Tow truck can only carry 2 passengers! Just one more example of 'threes a crowd'. What are we supposed to do when there is more than 2 occupants in the car. 
The good news is wE GOT THE BIRDSeed 😄😄😄😄😄

Katie asked for our help with a recipe for Chocolate Ripple Cake. Its her husbands birthday of Friday and he asked for this cake. Havent made it for a long time so it was great to revisit an old favourite. We even made an individual version of the same dessert, just a different presentation but just as yummy. Cheekyricho Candied Pecans

We love candied nuts of all varieties and often buy them warm crispy and fragrant from local produce markets, cooked at the stall by the producers and served in little paper cones with the top folded down. It's usually cheaper to buy 2 so we do and intend to keep one for later. They invariably never make it home. With me making my best sad puppy dog face at Richo so I can have the last one. We also buy fresh nuts from the farmers in an effort to support local producers and embrace the practice of being a 'Locavore' hopefully reducing our footprint on the environment and keeping  our money in the local community. The food Is  fresher and the farmers always have handy new ideas to best utilise their produce whether it be in the preparation for the table or serving it. So it's a win win for everyone. I shared my Macadamia Brittle recipe idea with one stall holder and a few weeks later his wife was telling about this wonderful recipe in YouTube using their nuts. She had no idea she was talking to the creator of that recipe. We had a little chuckle about the complete circle her little round nuts had turned, from the tree to the table. We were both grateful for the feedback. 
So Richo talked me into buying some Pecans, the plan was to make some Thanksgiving Recipes,  at the time I didn't realise Richo was all but addicted to Pecans. Before I knew it there was only a small bowl left for me to show you.  These ones apparently had harder shells he couldn't readily break with his fingers to eat, so they became the Survivors. We joke about call this dish Survivor Pecans but you would never find it and that would defeat the purpose of sharing the recipe with you. How to peel a kiwi fruit unless than 30 seconds

Richo recently made me a Daq-kiwi which is our invention of a Kiwi fruit cocktail. Tasted lovely but he was very slow to carefully peel the kiwi fruit preventing waste from excess fruit sticking to the skin. He now uses my method of skinning the fruit quickly, easily and safely. Delivers a neat little peeled fruit with minimal wastage. Perfect for decorating those flans & pavs. They don't need to look pretty for the cocktail because they are being blitzed but I was able to keep the production going smoothly peeling while he jiggered & blitzed. Everyone got a fresh icy bright tasty cocktail at the same time and we got to enjoy the spring sunset together. Sadly the sky was tainted by smoke from recent bush fires but the colours in the afternoon sky where magnificent.

Make Malaysian Kaya at home.

Going over some photos of our Malaysian trip and it reminded me to try and find Kaya, a sweet coconut & egg jam. No one sells it or has heard if it where we live so I decided to make my own, next problem we encountered was where to get Pandanus leaves necessary for the flavouring. No joy there so we bought some Pandan extract, which unfortunately is very highly coloured. I used less than half a teaspoon full to achieve the desired flavour which left me with an almost kryptonite coloured Kaya. If you can forgive me the deep colour you will praise the flavour of this delicious sweet coconut flavoured jam with a hint of Pandan flavour and a hell-of-a-lot of colour. Couldn't separate the two and the flavour was the primary concern. Will be featuring it on our cheekyricho YouTube channel this week. River Bank Repairs

We went to help some friends maintain the river bank. It was a very hot day and the river water was warm. Days like today you don't mind paddling around in the water . The tide beat us but gives us an excuse to get together again after the full moon for another working bee.

How to make a Flemington Fling

Its Melbourne Cup Day, the annual Horse Race Event that stops the nation. This is the only day of the year when you will get a park in the main street. Everyone in offices and banks will be sitting around a TV or radio watching and listening to the Australias most famous race. Office Sweeps are everywhere and even non gamblers break with tradition and have a bet. I dont know enough about horses to offer an opinion regarding a potential winner.  I had a horse called 'Taffy', as a girl,  but he was definitely no racehorse ;-))
I do know something about cocktails and this Flemington Fling invented for the Melbourne Cup by the Fling Bar is really refreshing and delicious. Its light and tart and great for sipping raceside while you watch history being made again. Remember the winning horses name because sometime in the future you are going to need that knowledge when playing a trivia game.

Roast Turkey with all the trimmings

Richo doesn't like Cranberry Jelly or sauce, he thinks its too sweet. So I decided to make some home made cranberry jelly and wind back the sugar meter. Last time I saw it he was hunched over it, guarding it with his fork! Apparently it's exactly what he has been waiting for.  The recipe is coming your way this week on our cheekyricho channel.  There will also be some Turkey leftover recipes, this bird was 5.8kg. I've seen smaller emus ;-)) tried out my new basting syringe with some toasted home grown sage butter. Moist, tender delicious result, well work the few dollars I paid for it. I can see myself using it quite a bit.

Well we discovered them in the cheekyricho kitchen after a recent Centauroscopy.
They are clinically disgusting looking but they sure taste great. Sticky, sweet, crunchy and techno colourful. We had a lot of fun making them. The kitchen will never be the same again, there arent many surfaces that didnt end up contaminated by Ghouls Guts.

Brain Cakes complete with secret Bloodclot.

We bought this Silicone Secret Cupcake Pan from a Crazy Shop for about $8. The instructions were very 'relaxed' in detail. We thought it had potential for our cheekyricho kitchen videos and decided to make Brain Cakes with Secret Blood Clots for a Halloween Recipe. It worked very well. the cakes looked cute and tasted great at the same time. You know what a fan I am of silicone as a cooking aid so there was no missing out on giving this new idea a try. They were really easy to make and decorate. They looked very effective and were just another simple addition to our Halloween Recipe Playlist on our cheekyricho Youtube channel. Just the first of a number of recipes made using Gaye Moynes Organic Cherries from her Cherry Orchard near Inverell New South Wales. She took us on a tour of her Orchard, where she grows all manner of stone fruits, English Acorns, Walnuts, Mulberries. She proudly announced her cherries were the first ones to be picked this season. The flavour and tender juiciness of her cherries are beyond description. If you happen along the Copeton Dam Road do call in and say Hi. The lady has won umpteen awards for her excellent garden produce, she is a passionate producer of quality wines, fruits,  and vegetables.

Cherry Orchard. Today we visited an Organic orchard between Copeton Dam and Inverell. The sweetest juiciest cherries were being picked by the owner Gaye Moyne. She took us on a tour of her orchard and Tilly had a einderful game with Charlie the farm dog. We bought some cherries and I spent the next 50 kilometres planning recipes to use these delicious little fruit. There are a lot less than we started with and already I'm wishing we bought more. They are do tender and Gaye informs us they are the first new cherries to be picked on the entire east coast. Needless to say Tilly slept like a log. Did you know the bird netting over trees makes a great doggie trampoline when you smash into it full bore during the Charlie race game.


Boundary Falls, a fairly steep walk down into the falls where the sounds of birds and falling water, running creek away from the rock waterhole and the musty earthy smells of the moss, damp soil and spring blossoms greeted you. The air is cooler, moister and fresher at the basin below the falls. Maybe it just seemed more oxygenated or was it because we were breathing heavier from the physical exertion just to get there. Either way the night brought the soundest sleep and a few stiff muscles to remind us of the energy spent in the forest.

Looks Funky and if you make a game of it they are sure to be more interested. Too Old or too cool for Dr Seuss, no worries. A Pope Eye Omelette or Zombie Blood Sandwich will fit the generations. Lets face it they aren't going to do a DNA test on it. Its a great way to use vegetables that are normally taboo from their plates. Introduces them to the idea of healthy food being fun and believe it or not tastes really good. I have definitely put nicer looking things in my mouth but then I do like to eat and this is just a family fun idea we thought might help with those fussy eaters out there. We hope you give it a try.
