Swedish Pancakes, Vegan, Gluten Free, Delicious cheekyricho Thermochef recipe.

We have received so many requests for more vegan recipes and Gluten Free Recipes. This delicious simple gluten Free Vegan Swedish Pancake Recipe will keep both camps happy. If your diet doesn't include these dietary restrictions don't worry you are guaranteed to enjoy them too.
A great healthy start to any day. Packed with fibre, vitamins, minerals, protein and flavour. Not too heavy yet satisfying, simple, we think it is Paleo Compliant and don't forget oats are reputed to lower cholesterol and promote healthy digestive health. OK we know they are good for you but they taste good too, this recipe uses those really ripe bananas lurking in the fruit bowl. You know the ones the kids neglect as the bowl is topped up with fresher fruit. The very same ones that may have been destined for the compost heap, contribute a delicious binding texture and sweetness to this dish.
We topped it with homemade Vegan Chantilly and sprinkled a few antioxidant laden blueberries around for colour and garnish.  Strawberries are cheap at the moment so they make a statement in a fresh lightly spiced raw sauce. You know you need to try this. Every molecule in your body will thank you especially the ones in your tastebuds. We have had a request for choko chutney from one of our viewers. Luckily our choko vine was still bearing so I was able to pick some of the shiny firm green heart shaped globes to bring you one of our families favourites Choko Relish Recipes.
We serve it with pickles, olives, a selection of cheeses, crusty bread and cold cuts of meats or salamis. We have been known to pack it into Bacon and Egg wraps for a tasty Breakfast alternative to more traditional sauces.

Sultana Mug Cake

When you don't have time to make a full sized cake, if you are a solo diner or if you want something quick and easy to cook for that mid afternoon pick me up this Sultana Mug Cake is perfect.its moist, light and tasty. Can easily be shared by slicing it and buttering the warm cake with some cold butter for a true teatime treat. No more wasted cake or getting bored with a whole cake when you are the only one to eat it.
Have it with icecream or custard for a warming dessert. Made in under two minutes you can cook it and eat it in your tea break.

Apple Crumble or Apple Crisp from Pantry to Plate in under an hour.


Apple Crumble or Apple Crisp, I don't like sloppy apple puréed Bain Marie style Apple crumble, I want the apples to be a little crisp too, I want spice, a crisp tasty crumbly topping, thats right it's gotta be crumbly not stodgy doughy texture and flavour lacking crud. This is light fresh tasty, healthy and from pantry to plate in under an hour. You are going to want to try this recipe to remind you what good old fashioned comfort food is supposed to taste like. Portia sleeping on the ceiling.


Portia is our 15 year old chihuahua.  She has Doggy Dementia, doesn't recognise us sometimes. Has decided she would like 3 meals a day, probably because she forget she had the last one. Once a home body but now has taken to wandering off at speed, in the last direction you would imagine her choosing. The vet says she has the heart of a puppy and apart from being almost blind and mostly deaf health wise she is in great shape. Her personality towards strangers needs a bit of work but that's not the fault of her age, she has always been a bit intolerant. At least three times a day she does a very energetic 'Dinner Dance' which is really quite cute and bosses her younger but much bigger sister Tilly around with aggressive finesse. The rest of her days are spent sleeping, resting, napping or relaxing. She has a little Cave for a bed complete with leopard skin mattress and real baby lamb skin . When she hops into bed the task of energetically preparing her bed for the night is hilarious bunting, humping, mouthing (she is dentally challenged) digging and disturbing the bed until on this occasion she ejected the lamb skin, circumnavigated the room coming to rest on the roof of the cave. Either frustration, exhaustion, inability to perfect the ideal sleeping arrangement or in her bewildered state, believed it was fine she promptly went into a snore laden coma like sleep on the ceiling of the cave. It was cute to watch the amount of effort she exerted to reach her satisfactory repose position.
We love her to bits and know that she is in the 'Departure Lounge' but it is our mission in life to make her as happy as possible.
She is a very well travelled little dog, having been to every state Barr Tasmania & Western Australia. She knows all of my secrets and she trusts me implicitly. She does have one annoying vice, she enjoys rolling in things, the more unpleasantly scented the better. She once had 3 baths in 30 minutes because each time she ran into the garden and rolled in chook manure, dead worms and fresh wild organic duck poop. 
Her favourite past time used to be walking for miles on the beach and did it everyday but now she has forgotten her daily passion and often has a blank stare into space whenever we take her or try to remind her. 
I am eternally thankful for the love we have shared for so Many years and hope to enjoy her company for a long time yet.

Chocolate Mug Cake with a Secret Centre.

When you feel like a sweet treat but you don't want to make a full sized cake, there is an alternative. Solo Diners can rejoice with this moist, fluffy, mug brimming Chocolate Cake which has a secret fudgey gooey centre of warm chocolate truffle. We grabbed a bag of little round chocolate balls filled with a creamy light chocolate whipped centre from IKEA and I immediately started to
Plan how I could incorporate them into a dessert. This is what I came up with.You will need a large capacity mug (I used my favourite Hippy Mug) a few pantry staples and a microwave. Now don't go judging this cake until you try it. Microwave Ovens aren't normally the ideal Baking vessel for cakes, tending to make them a bit rubbery or dry but they do a champion job on Mug Cakes because the smaller quantity allows the cake to cook to perfection without having over or under done pockets. 
When you simply must have cake but you don't have time to Make a full sized cake, that you will have to eat for days until you get sick of it or it goes stale, then this is the best way I know of to satisfy that cake craving. When portion control is important this can by sliced in half and makes two servings or you could hide in a corner with it and a spoon. Your choice!!😋

Pre conceived bias you have regarding mug cakes. 
How will you eat yours, carefully spoon out the molten creamy chocolate ball from the centre first or eat all of the cake around it before popping the cream filled treat into your mouth last thing to savour its ever lasting deliciousness long after the last crumb has disappeared. I'm a savourer whilst Richo's a gobbler!
