At a recent wedding after party we learned one of the guests was from Florida. We wanted to try out our new S'mores Dip recipe. It was an absolute hit. Incredibly simple to put together(especially in the hosts kitchen) the base remained smooth gooey and creamy with a not too sweet taste whilst the marshmallow topping was crispy brown topped over a stretchy fluffy moist interior that could be drawn into long strands of spun sugar and delicately wound around the rich chocolate scoop full on top of a savoury Ritz Cracker. If you think these flavour combinations are bizarre it's because you haven't tried it. The rich bittersweet smooth creamy chocolate, the fluffy warm chewy marshmallow crisp topped topping and the crunchy salty crackers are a match made in heaven. 5 ingredients 10 minutes and you are in chocolate lovers heaven. Healthy Corn Fritters
We like Corn a Fritters but don't like all the fat so we made our own version that's not deep fried. Using fresh vegetables & herbs from our garden, free range eggs, low fat milk and a smear of home made ghee, we topped them with oil free fresh tomato and herb salsa.
Cheekyricho Corn Dogs & Crab Sticks
Cressy requested we present some corn Dogs. I tried to get Continental Frankfurts at my local supermarket but they don't stock them so we had to get footy franks.
So we made Corn a Dogs, little Corn Puppies and some Battered Corn Crab Sticks. Plenty of Variety and perfect little cocktail Bites for your next party. Easy, economical Carnival Food. The kids will love eating them but they are definitely a once in a while treat. We used low fat milk and no sugar in the batter which is about the healthiest concession you can make for a deep fried snack containing manufactured meat.

Swiss Roll with Home Made Passionfruit Curd & Cream
Just in case you were thinking it's impossible to make this gorgeous Swiss Roll without a mixer we are here to show you how simple and quick it is with just a balloon whisk.Dont get me wrong you will have to mix it vigorously but it's a very light mix and you can swap hands of course the first mix is for 5 minutes, add a couple more ingredients and another wazzy up for 2 minutes. Fold in the flour gently and bake it for 12-15 minutes. That's it. Make it dairy free by substituting the filling for jam or jelly. Fill it with any sweet filling of your choice. We chose Our own home made seedless Passionfruit Curd because we have buckets of it, thanks to our Passionfruit vine which is still producing abundant fruit in the middle of winter as if it was on steroids.
Slather it with your choice of teatime filling and then gently roll it up. The wow factor is visual but the real test is when this feather light sponge melts in your mouth with every eager bite. This is bound to become your next go to teatime treat.
You will be licking your fingers and fighting over the last crumbs. Hey it's so easy if you need to you can make one lactose free by simply filling it with a nice berry or fruit jam and heaven knows we have given you a huge selection of home made conserves and jam recipes to choose from. Taiwanese Restaurant Dinner
We planned a big couple of days camping in the new van picking up parts for it. The weather was spectacular. By the end of the first day we had no where left to sleep so we headed home. We didn't have time for lunch rushing to the last warehouse before it closed and negotiating the start of Ffiday arvo peak hour traffic and accidents out of the city. With a van full of bits and parts and very empty bellies we found ourselves in an unfamiliar part of town looking for somewhere to eat. Richo (well renowned for his love of meat and three vegetable and total reluctance to try new cuisines) said "Let's try Taiwanese!" I thought I was hearing things! So we did. Word of advice never order when you're starving.
Richo suggested we share different dishes to maximise our exposure and also safeguard in case we order something we don't like at least we can share the mistake too. First thing that caught his eye was a Pork and tofu Hotpot. That sounded pretty safe not too spicy. Now some rice, so he goes for a Salty Fish & Chicken Rice dish. That's unusual but OK. Way out of his comfort zone though. I let him have his head with growing amusement and bewilderment.
He's on a roll and a huge meat of any type fan so the next thing to jump out at him was a plate with 3 sorts of meat Crispy Roast Duck, BBQ Pork and Crispy Skin Pork Belly. Just Meat!!
With a few pickled vegetables. Then he spies a Duck soup and decides we can share one bowl of that to sample it. The waitresses eyes are growing wider by the minute as I try to pull the handbrake on him.
We are going to need a bigger table!! The soup turned up. I have made bread in smaller mixing bowls. The food was fabulous, fast, massive and I

He ordered fresh Plum Juice to drink whilst I opted for a Red Bean Bubble Milkshake ( which is a meal in itself.) we had to get 3 takeaway containers and ended up getting two more meals out of it, which was of course, was no surprise to the waitress. Despite Richo protest we would handle it because we were hungry. There was enough food to feed a small African nation LOL.
It is worth the couple of hours drive to go back there. It was so very delicious, fresh fragrant, tasty and unusual. They had a chilli sauce accompaniment which was like dry roast chopped chillis, smoky but not too hot. Our foray into Taiwanese Cuisine was a howling, screaming raging success.
