Swiss Roll with Home Made Passionfruit Curd & Cream

Just in case you were thinking it's impossible to make this gorgeous Swiss Roll without a mixer we are here to show you how simple and quick it is with just a balloon whisk.Dont get me wrong you will have to mix it vigorously but it's a very light mix and you can swap hands of course the first mix is for 5 minutes, add a couple more ingredients and another wazzy up for 2 minutes. Fold in the flour gently and bake it for 12-15 minutes. That's it. Make it dairy free by substituting the filling for jam or jelly. Fill it with any sweet filling of your choice. We chose Our own home made seedless Passionfruit Curd because we have buckets of it, thanks to our Passionfruit vine which is still producing abundant fruit in the middle of winter as if it was on steroids.
Slather it with your choice of teatime filling and then gently roll it up. The wow factor is visual but the real test is when this feather light sponge melts in your mouth with every eager bite. This is bound to become your next go to teatime treat.
You will be licking your fingers and fighting over the last crumbs.
