Healthy Corn Fritters

We like Corn a Fritters but don't like all the fat so we made our own version that's not deep fried. Using fresh vegetables & herbs from our garden, free range eggs, low fat milk and a smear of home made ghee, we topped them with oil free fresh tomato and herb salsa. 
They are super simple to make, a colourful healthy alternative to the Hash Brown and perfect for brunch, a light meal or easy side. They are very tasty, we ate these with a bowl of steaming home made Chinese Soup for a satisfying winter lunch.
