Asparagus, Leek Camembert Tart
Last week I was swimming in an unheated pool, it was brisk but enjoyable. This week the quilt is back on the bed, the water is icy and I'm looking for delicious comfort food to share with you. This recipe for Asparugus, Leek Camembert Tart came about because I bought some gorgeous fresh crisp asparagus and a fat tender leek, not wanting to make soup, although they would've been perfect candidates for that dish, I decided to make this lazy brunch/ afternoon lunch recipe. We'd been working on the the new campervan all morning and it had been threatening to rain again. We continued working as long as the weather would let us and ended up finishing early for the day because of another scurried tool pack away due to the sudden rain scud that snuck up from a different direction. What better way to finish an early days work than with this delicious tart, a glass of white wine and an arvo nap, listening to the rain. Everything steered us in that direction. Cold, dark skies, unrelenting rain and a power outage due to the storm. Can't cook, can't watch TV, can't do YouTube, full belly so can't eat. Can Sleep and recharge our batteries.
Now this was way too much creamy cheesy, crisp asparagus and sticky leek, crusty pastry enclosed goodness for one meal so we had our fill with a fresh green garden salad and the left overs were a perfect room temperature snack for dinner. Two meals, both delicious which reminded me my latest creation would make a gorgeous picnic dish. I seem to be very picnic orientated now the swimming season is finally over for this summer.
